                               Raspberry Chipotle Blackbean Dip

 

 

What would a renovation blog be without food recipes, am I right? As a wife, a mother, and just and all around foodie, I’m always looking for new recipes to feed my fam! I am hoping yall like food as much as I do and will enjoy these food posts.

 

I love to snack, I can not deny! and when I met this dip, it was love at first sight. We met when I was attending a lunch at a lovely lady’s home from my BSF group! If you love sweet and savory then you will love this dip too.  It involves some of my favorite foods like cheese and tortilla chips. But I think the star of this show is the sauce, Bronco Bob’s Raspberry sauce .And even though we use beans, it is in no way “healthy.” When I make this, I have to use portion control.

 

 

I chop onion (usually red onion-but only had yellow this day) and garlic and saute it in a little olive oil (too much and your dip will be oily) with salt and pepper.

 

 

 

Add the onion mixture to softened cream cheese.

 

 

 

While chopping the onions, warm a can of drained black beans.

 

Add cream cheese mixture to an ovenproof pan, surround with black beans. Create a well in the cream cheese and pour in the raspberry chipotle sauce.

 

 

Add some cheese (I used what I had on hand, a mexican cheese blend) then pop it in the oven.

 

 

Out comes this beauty!

 

 

Here is the recipe!

  • Small Yellow or Red onion
  • 2 cloves of garlic
  • 8 ounces cream cheese (softened)
  • 1 can (15 ounces) black beans
  • 1/4 cup of shredded cheese ( you preference- Mexican blend, parmesean, whatever you can think up!)
  • 4-5 Tbps of Bronco Bob’s Raspberry Chipotle Sauce
  • 1 tsp Olive Oil (to saute)
  • Preheat Oven to 400 degrees F

Dice up the onion and garlic. Over medium heat, saute the onions first for about 5 min, until translucent, then add in the garlic for about 30 seconds. Remove the pan from the heat and set aside to cool.

Heat the can of black beans.

After the onion mixture has cooled, mix it into the cream cheese in a mixing bowl. Transfer the cream cheese mixture back into the pan used to saute the onions. Surround the cream cheese mixture with the warmed beans.

Create a well in the cream cheese and pour in the raspberry chipotle sauce. Add your preference of shredded cheese on top and pop it in the oven for 12 minutes.

Scoop it right out of the pan with your favorite tortilla chips!
